I'm not sure what Paolo you're talking about but the Paolo we know is out after every gig chatting to fans and signing autographs. The band talk about it all the time and unless their is an unforseen circumstance make a point to be found after all gigs meeting and talking to fans. This is, of course, in addition to all of the official meet 'n greets and promo events that take place over the course of any show day.
It's a lot of work to smile every day for every photo!

typical answer from their management, but i dont think its alot of work to just smile, or at least do a different facial expression, he looks the same in every single picture. This is nothing against the guy or you, but if paolo thinks thats alot of work just to sign autographs and smile for the camera, then i think hes in the wrong profession.
And im sure nobody here is going to agree with me.

Paolo is a professional musician. Its not his job to sign autographs and smile for the camera, he doesn't have to do those things, but he does.
Like Justin said, it's a lot of work to smile every day for every photo.
It's just not possible. Everyone has bad days.

However much I think I'd love to meet them, the chance just really isn't that great anymore. Even if I did, it probably wouldn't be all that great because I'd be acting like such a fool.

Some people don't like smiling for photographs. I know many people who hate getting their picture taken and so don't smile. I don't mind that he's not smiling in my pic with him. He was really nice to me and that's what matters.
